Cheese Berlin 2023

Cheese is time. And like a good time, good cheese cannot be fixed. It is alive and constantly changing. It is much more than stale, solid or even dead milk: it matures and changes, is a living natural product of time.

The time that cheese-makers give to it and to us when they
milking their animals in the barn early in the morning. The time that allows ripening milk to live longer as cheese. The time of attention that cheese requires when ripening. And also all the time it takes to learn to understand soil, animal, milk and craft in harmony.
